Baingan Bharta is a delicious simple recipe. This recipe uses the broil setting in the oven rather than roasting on stovetop.
1. Cut slit in egg plant and add garlic to it.
2. Wrap the eggplant in foil and broil for 20 minutes. Flip and then broil for another 20 minutes.
3. Remove from oven, smash the already soft eggplant and remove any skin
4. In a pan, add oil and then jeera seeds. Add onion and saute till translucent. Add tomato to it and then spices.Once a smooth paste is formed , add the eggplant and saute. Let it cook on low flame for 7-8 minutes
