Goan style sweet pumpkin vegetable made during the pumpkin season.
1. Peel the skin off the pumpkin and cut into medium sized dices.
2. Heat oil in a vessel and once hot add asafoetida and mustard seeds. Let the mustard seeds flutter.
3. Add in the pumpkin.
4. Add in coconut, red chili powder, salt and crushed schezuan peppers.
5. Add water and jaggery.
6. Cover and cook till the pumpkin is soft.
7. Enjoy hot with roti or accompaniment to rice.
