Masala Jowar Rotli

The first time I ate masala jowar rotli was at a friend's place. I was intrigued by the technique her mother in law used for making this simple healthy bread. Here is her recipe.

Ingredients
jowar or sorghum flour
3   cup
cumin powder
2   tablespoon
turmeric powder
1   teaspoon
fresh chili paste
1   teaspoon
fresh ginger paste
1   teaspoon
fresh garlic paste
1   teaspoon
salt
1   teaspoon
warm water to knead the dough
 
Instructions

1. In a mixing bowl, take the sorghum flour, turmeric and cumin powder. Also add in the chili, garlic and ginger paste.

2. Mix everything coarsely with water. Make sure that the dough is not fully formed. Take a small portion of the dough add more water and knead to form a smooth dough.

3. Apply water to your hand and roll out the dough in your hand as shown below. You can also roll it using a rolling pin. However, it takes a lot of practice to master the art of rolling this rotli since the dough has no gluten in it. Fry until cooked on both sides. Note that she uses a clay frying pan.

4. This roti does not require any oil and is very healthy option, especially for people with gluten allergy. Enjoy as is or with sabji of your choice.
