      Aanth is the Konkani word for fish roe. Here is a recipe of how this delicacy is made in my house. Usually served as an accompaniment to fish curry rice.

        Ingredients
       
 
       
          fish roe
        
 
        
          1.5   pound
        
 
       
          chopped onion
        
 
        
          1   cup
        
 
       
          desiccated coconut
        
 
        
          1   cup
        
 
       
          chopped cilantro or coriander leaves
        
 
        
          3   tablespoon
        
 
       
          salt
        
 
        
          1/2   tablespoon
        
 
       
          garam masala powder
        
 
        
          1/2   tablespoon
        
 
       
          turmeric
        
 
        
          1   teaspoon
        
 
       
          red chili powder
        
 
        
          1/2   teaspoon
        
 
       
          coconut oil to fry
        
 
        
          3   tablespoon
        
 
       
          tamarind paste
        
 
        
          4   tablespoon
        
 
       
        Instructions
       
 
       1. In a mixing bowl take finely chopped onion, desiccated coconut and chopped cilantro. Also add in the garam masala, salt, turmeric, chili powder and tamarind paste.
2. Clean and wash the fish roe. Add in the roe to the mixture. Mix well.
3. Heat a pan and add coconut oil once hot. You can make small pancake sized aanth or a large one like I did and then cut it up while serving. Cook for about 2-3 minutes or two on both sides. Serve hot.
