Goan Fried Tapioca

Here is a simple yet delicious Goan style of preparing Tapioca. This mildly spiced tapioca is fried till crispy with rava coating.

Ingredients
medium sized tapioca
1  
rava
2   cup
turmeric powder
2   teaspoon
red chili powder
2   teaspoon
salt
1.5   tablespoon
kokum
15  
oil for frying
4   tablespoon
Instructions

1. Wash the tapioca very well to remove all the dirt. Peel and cut the tapioca into round discs as shown. Please be cautious and wear gloves if possible because this root vegetable will cause itchiness. Keep a bowl ready with kokum, warm water and 1 tablespoon salt in it.

2. Once you cut all the pieces, mix it well in the salt kokum mixture. This helps to take the itchiness away. Let it sit for at least 30 minutes. Make a mixture with rava, turmeric, red chili powder and remaining salt.

3. Heat a pan and add oil. Dip the tapioca discs in the rava mixture to coat it well. Add these discs to a hot pan.

4. Add some water, cover and let it cook for around 2 minutes. Open and let the moisture evaporate. Turn the fodiyo only after the moisture is all gone and you see a crispy layer of rava. Turn and cook on the other side. Enjoy hot!
