Injera is an Ethiopian fermented flat bread made with Teff flour. It is a healthy, gluten free bread, served with different spicy hot and cold meat or vegetable stews.

Ingredients
teff flour
1.5 cup
water
2 cup
salt
3/4 tablespoon
yeast
1 teaspoon
oil for frying
Instructions
1. In a large mixing bowl, mix water and teff flour with the yeast and make a smooth paste.
2. Cover this mixture with a wet muslin cloth and set it aside to ferment for 2 days in a warm place. Do not disturb the mixture. It will appear like in the picture on the second day.
3. Add salt and your batter is ready.
4. Heat oil in a frying pan, pour a little mixture like you would for dosa. Cover and cook till done, approx 1-2 minutes. Serve hot with gravy of your choice.
