Growing up in Goa, this was one of my favorite desserts. China Grass or agar-agar is a good vegetarian substitute for gelatin in puddings and custards.

Ingredients
packet china grass (agar-agar)
1/2  
milk
1/2   liter
drops food color
2-4  
sugar (as per your taste)
2-3   tablespoon
water
1   cup
Instructions

1. For packet of china grass, you need approximately a liter of milk. So for 2-3 people half a packet is sufficient. (Note: In stores you also get agar powder but I have not tried that so not sure of the ratio. This recipe is what my mom used to make for me).

2. Cut the china grass into thin strips and let it soak in a cup of water for 25-30 minutes.

3. In a pan, bring the milk to boil and add the soak china grass, sugar and food color and mix well.

4. Pour the mix in a bowl, let it cool and refrigerate for about 2 hours so that pudding sets and serve chilled. If you like you can add dry fruits or fruits too. I like mine plain and simple.
