Curried Breadfruit

Breadfruit, also known as Nir Ponos in Goa, is a healthy vegetable that once cooked has a texture similar to a potato but has a mildly sweet taste. It is one of my personal favorites. Here is one of my own creations with this exotic ingredient.

Ingredients
large breadfruit/nir ponos
1  
coconut oil
1   teaspoon
garam masala powder
1   tablespoon
kashmiri red chili powder
1   teaspoon
turmeric
1/2   teaspoon
jeera powder
1/2   teaspoon
coriander powder
1   teaspoon
salt
1.5   teaspoon
water
1/2   cup
coconut milk
150   milli liters
kalauji/ onion seeds
1   teaspoon
curry leaves
10  
asafetida
1   pinch
small onion finely chopped

Instructions

1. Wash, remove the skin and inner stem, and cut the bread fruit into small pieces. Bread fruit belongs to the jackfruit family. It has a mild sweet taste.

2. In a pan heat oil. Add curry leaves and asafetida once oil is hot. Next add finely chopped onion.

3. Add in the onion seeds and saute till onion is soft. Once onion is soft, add in the garam masala powder, turmeric, red chili powder, salt, cumin powder and corriander powder. Saute for a couple of minutes to bring out the flavor in the spices.

4. Add in the bread fruit. Add coconut milk and water. Mix well. Cover and let it cook till soft and most of the water evaporates, stirring occasionally.

5. Enjoy hot with chapatis.
