A quick recipe of egg bhurji which can be served with bread or rice.

Ingredients
eggs
3  
medium onion, finely chopped
1  
tomatoes, finely chopped
2  
cumin seeds
1/2   teaspoon
coriander powder
1   teaspoon
turmeric powder
1/4   teaspoon
chili powder
1/2   teaspoon
garam masala
1/2   teaspoon
salt to taste
 
oil
2   teaspoon
water
3/4 - 1   cup
Instructions

1. Heat oil in a pan, add cumin seeds. Once they start spluttering, add onion and mix well.

2. Once the onions soften, add coriander powder, turmeric powder, Garam masala and chili powder. Mix well and cover pan. Keep on medium heat for 2-3 minutes.

3. Add tomatoes, cover and cook for 2 to 3 minutes till they soften.

4. Add water cover lid and bring to boil.

5. Crack the eggs into the boiling gravy and mix well.

6. Once all the water evaporates, take off heat and serve with bread.
