Ingredients
raw mangoes with soft seeds
10  
red chillii powder
500   grams
black pepper
50   grams
methi
5   grams
nutmeg
1/4  
mustard seeds
20   grams
black hing (asafoetida)
15   grams
oil
1/2   liter
rock salt
1   cup
Instructions

1. Cut the mangoes into quarter as shown in the pictures.

2. Remove the soft seed. Stuff the mangoes with salt. Keep it aside for 5 days. Place clean stones on top to ensure water is removed completely (store some of the salted water for later). In the old days , the mango were pressed with granite mortar and pestle.

3. Each morning and evening turn the mangoes.take half of the ingredients and deep fry it in the oil (put the ingredients in a tadka spoon and let it boil/fry if ingredients get into the oil, that ok). Once you remove the spoon keep the oil aside to cool

4. take the raw and fried ingredients and mix it in a mixer, u can add a bit of water from the mangoes. Make sure the paste is not too wet stuff the mangoes with the masala paste and then place the stuffed mangoes in a bottle. Pour the cooled oil on it. and voila yummy pickle ready
