A simple, tasty and nutritious spinach preparation.

Ingredients
spinach,chop into pieces
4   cup
tomatoes chopped
2  
curry leaves stem
1  
green chilies(as per spice level)
6-8  
garlic cloves
3   measure
salt to taste
1/2-1   teaspoon
turmeric or haldi
1/4   teaspoon
chana dal
2   tablespoon
urad dal
1   tablespoon
mustard seeds
1/2   teaspoon
cumin seeds or jeera
1/2   teaspoon
oil
1   tablespoon
Instructions

1. Heat a pan and heat the oil in it. Add Chana Dal and Urad Dal and roast until they are light brown.

2. Add mustard seeds and cumin seeds and fry till the seeds splutter. Add the turmeric,chopped curry leaves and garlic and fry well.

3. Add the onions and green chili and saute for a minute.

4. Add the spinach, tomatoes and salt and mix once. Cover with lid and let it cook stirring every 2-3 minutes on a low-medium flame.Once the spinach is cooked, turn off the stove and serve.This is a wonderful accompaniment with rice or roti. Fresh spinach has a lot of water content in it, so if cooked with lid on the water should be sufficient to cook it through. If your spinach is stale it would have relatively less water in which case you might need to add few drops and cook it.
