Pithi is a Goan preparation made with horsegram flour known as "kulith" in konkani. It is believed to have health benefits and is usually eaten during the monsoons in Goa. It is another recipe that is getting lost with time.

Ingredients
horse gram
1/4 cup
coconut milk
1.5 cup
salt
1/4 teaspoon
jaggery
3 tablespoon
Instructions
1. Dry roast the horsegram and let it cool completely. It is important to cool it completely or the steam will not allow the powder to be dry.
2. Once cool grind into a fine powder. Ensure that your mixer is dry. Transfer this powder in a saucepan. Add the coconut milk.
3. Add in the jaggery and salt as well.
4. Mix everything well and let it come to a boil. Keep a close eye on it and stir frequently to prevent it from sticking to the bottom of the pan. The mixture will thicken. Enjoy warm! Stay healthy!
