Potato Omlette

A version of omelette with potatoes in it. I make this when don't want to have toast.

Ingredients
eggs
2  
small potato
1  
green pepper
1  
pepper
1   pinch
salt to taste
 
cooking oil
1   tablespoon
coriander leaves for garnish
 
Instructions

1. Chop the potato in circular fashion as shown in image below. Cut the green pepper into cubes.

2. In a bowl, beat the two eggs and add the green peppers, salt and pepper.

3. In a pan, add oil and let it heat. Add the potatoes and let them cook for 2-5 minutes. Add the beaten egg and let it cook for 5 minutes.

4. The most tricky part is the flipping of the omelette. First check that the base is completely cooked. if not the omelette will split. Once you are sure that the base is cook, put another similar size pan on the stove and gently flip the omelette into the new pan as show in image. Let the omelette cook for 5 minutes and garnish with ketchup and coriander leaves.
