Salted Tongue

This is another family secret recipe where we cure the beef tongue using salt and spice it to create a delicacy enjoyed in Goa.

Ingredients
large beef tongue or veal tongue
1  
rock salt or sea salt
3   tablespoon
salt petra
1   tablespoon
cloves
10  
peppercorn
10-15  
cinnamon stick
1  
water
 
Instructions

1. In a glass pan, put the tongue and add salt, cloves, cinnamon and salt petra. Mix well.

2. Cover the tongue and keep in the fridge. For the next seven days, open the tongue and rotate the side and mix with salt once a day.

3. After seven days, Soak in water for about an hour and wash off all the salt.

4. In a pressure cooker, add the tongue and water upto the brim and pressure cook for around an hour. Use a sharp knife remove the outer skin and slice the tongue into thin pieces.
