Spiced Carrot cake

This is my mom special cake recipe. I love the way this recipe uses spices to enhance the flavor of the cake.

Ingredients
grated carrots
2   cup
chopped dates
2   cup
maida or all purpose flour
2   cup
sodium bicarbonate
1   teaspoon
eggs
3  
powdered sugar
1/2   cup
nutmeg
1   teaspoon
refined oil or vegetable oil
1   cup
vanilla essence
1   teaspoon
clove, cinnamon and cardamon powder
1   teaspoon
mixed nuts almonds, pistachios, walnut, pecans (optional)
1/2   cup
Instructions

1. Set aside all the ingredients

2. Beat one egg at a time for at least two minutes and then all three eggs. Pre-heat the oven to 325F

3. Add powdered sugar and beat till fluffy and light. Add the oil, grated carrots, dates, and nuts. Beat for another two minutes. Sift maida with sodium bicarbonate. Add vanilla essence and powdered spices. Add the mixture to the egg mixture and beat for a minute. Add the mix to a greased tray and bake till golden brown( approximately 50 minutes). I use a toothpick to check if it is done.When you poke the cake with the toothpick and if batter stick to it; let the cake stay in the oven for a few more minutes.
