Yellow rice made with turmeric and oil, a special dish prepared on birthdays by Kashmiris.

Ingredients
rice
1   cup
turmeric powder
1/4   teaspoon
mustard oil(preferable) or cooking oil
5   teaspoon
water
1 3/4   cup
salt to taste
 
Instructions

1. Take rice and water in a pot. Let rice cook on medium to high flame. Put turmeric powder in it and mix well.

2. When the rice is cooked 70 percent(semi hard), drain out the water by covering the pan with a tight lid. Reduce the flame to low. Now cover the pan with lid again and put the pan back on low flame and let it cook for 5 minutes. After 5 minutes turn off the flame. Leave the lid on and let it cool for 5 minutes.

3. Now heat a pan on medium to high flame. Put oil in pan and let oil heat. Then that let oil cool. Then mix oil with salt and rice. Tahar is ready to serve. NOTE: If you are using mustard oil, let it heat until smoky because heating till smoky will remove its raw smell otherwise yellow rice won't taste good. If you are using cooking oil, it is not necessary to heat it until smoky because it anyways doesn't smell different.
