Fried eggplant or brinjal (begun) usually served with dal and rice
1. Cut the eggplant in semi-circular shape
2. Mix the cut eggplant with turmeric powder and salt.
3. Heat oil in a frying pan for 5-6 minutes
4. Add the eggplant to the oil(one or two pieces at a time). Turn the eggplant pieces in the oil to fry the other side .Note - The eggplant will turn very soft
5. Take out from pan and place on a tissue paper to drain excess oil.
