Kangaanchi Usli is a quick, one pot breakfast item made in Hindu Goan households using sweet potato. It is a lightly spiced sweet potato dish cooked with coconut to give it the Goan touch. This recipe is also eaten during fasts.
1. Wash and cut the sweet potatoes with skin on into 1 inch cubes.
2. In a pan add the diced potatoes, freshly grated coconut, slit green chilies, salt, sugar and water.
3. Cover and cook on a medium flame till the sweet potatoes are cooked. cook till most of the water evaporates. It usually takes around 20 minutes. Enjoy hot for breakfast.
