Another simple Veg favourite at my house.
1. Cut and saute the onion in a couple tablespoons oil.
2. Add two chopped tomatoes and fry for a few minutes.
3. Add the garam masala and fry for a few more minutes.
4. Add the Brinjal and cook until almost tender.
5. Add the vinegar, sugar and salt to taste.
6. Note - Do not over cook or you'll end up with a paste.
