Ingredients
brinjals/eggplant (medium size )

water
1 cup
kala masala (goda masala)
1/2 tablespoon
garam masala
1 teaspoon
garlic cloves crushed
3-4
ground nut powder
4 tablespoon
turmeric powder
1 teaspoon
mustard seeds
1 teaspoon
cumin seeds
1 teaspoon
asafoetida
1 teaspoon
jaggery
1 tablespoon
cooking oil
2 tablespoon
finely chopped coriander leaves
2 tablespoon
Instructions
1. Cut eggplants into small pieces .
2. Add cooking oil to a hot deep pan. Put Mustard seeds, Cumin seeds, some turmeric powder (not all),jaggery and asafetida to oil and let it splutter . Add cut eggplants to it and stir it for 2 minutes.
3. Add some more turmeric powder, Kala masala, garam masala, garlic, groundnut powder, and some chopped coriander leaves (not all) and Stir the mixture for 2 to 5 minutes.
4. Now add water and stir.
5. Cover with a lid and keep for 8 - 10 minutes on the medium flame. until the eggplant is cooked. Garnish with Coriander leaves and serve
