Muskachi Bhaji

Maskachi Bhaji is a simple yet delicious Goan vegetable recipe. Drumstick leaves cooked with simple ingredients are served with a regular Goan meal as a side dish. Post jackfruit season, usually this bhaji is cooked with dried jackfruit seeds. If jackfruit seeds are not available, dal is added.

Ingredients
drumstick leaves
3   pound
jaggery
4.5   tablespoon
salt
3/4   teaspoon
chopped onion
1   cup
grated coconut
1   cup
green chilies chopped
2  
water
1/2   cup
masoor dal
4   tablespoon
Instructions

1. Thoroughly wash the drumstick leaves. Remove the leaves from the stem and finely chop the leaves.

2. In a pan add the chopped leaves, onion, grated coconut, jaggery, salt , green chilies and water. Also add in washed masoor dal.

3. Cover and let it cook till the dal is done and till most of the water evaporates. Stir occasionally. Serve hot with chapati or with a Goan meal.
