Potato Bhaji

This basic, simple and easy Indian potato dish has a dry texture. A perfect breakfast or brunch dish for lazy weekends.It is also known as batata sukhi bhaji. Accompanied by pav (or goan pao,ladi pao) or deep fried pooris.

Ingredients
potatoes,boiled, peeled and cubed

onions,sliced

mustard seed
1   teaspoon
cumin seeds
1   teaspoon
curry leaves
12  
green chillies,finely chopped
2  
ginger,chopped
2   tablespoon
salt per taste
 
oil
4   tablespoon
corriander ,chopped
2   tablespoon
tumeric
1/2   teaspoon
Instructions

1. In a pan, add oil. Add Mustard seeds, allow them to splutter. Add the cumin seeds.

2. Add onion and fry till soft and translucent.

3. Add the turmeric, ginger, chillies and salt. Mix well. Fry for 2 minutes.

4. Add potatoes and coriander. Serve with bread or pooris.
