Dhavi bhaji is a green leafy seasonal vegetable found in Goa. It belongs to the amaranth family. Here is a simple way in which it is prepared in Goa.

Ingredients
dhavi bhaji/amaranth
1   pound
onion
1/3   cup
coconut
2   tablespoon
masoor dal
2   tablespoon
salt
3/4   teaspoon
green chili
1  
jaggery
1.25   tablespoon
turmeric
1/3   teaspoon
Instructions

1. Thoroughly wash the amaranth leaves. Chop them roughly.

2. In a vessel, add the chopped leaves along with chopped onion, coconut, green chili, masoor dal (washed), turmeric, jaggery and salt. Mix everything well.

3. Cover and cook until all the water evaporates. You will notice that the amount of leaves will reduce to almost 1/3 of the original amount. Serve as a side with a Goan meal!
