Methiyaam Pej is a healthy recipe made with parboiled rice and fenugreek seeds cooked in coconut milk and jaggery. It is particularly good for nursing mothers. I remember eating this mostly at naming ceremonies.
1. Wash the rice and methi thoroughly. Cover with water and soak for at least an hour. This will help reduce the cook time. Cook the rice and methi till half done with water. Stir occasionally.
2. Add in the thin and thick coconut milk. Also add in the jaggery. Stir and cook till the rice is fully done and soft.
3. Add salt. Mix well. Turn off the flame. Enjoy hot.
