Moonga Udok is a healthy iron rich preparation made with split moong. The moong dal is boiled with jaggery and salt. This was our mid day snack during summer holidays at my Granny's place.

Ingredients
split moong dal
1/2   cup
water
6   cup
jaggery
75   grams
salt
1/2   teaspoon
Instructions

1. Traditionally, whole moong were dry roasted. Then once cooled, they were split using a "daatem". To make things easier and because I do not have access to the traditional kitchen tools, I am using split moong dal. Dry roast the moong dal till it begins to turn slightly brown and begins to give out a smoky aroma. Add water and let it boil till the moong is cooked.

2. If there is scum that builds up on top, remove it. Stir occasionally. Add the jaggery.

3. Also add in the salt. Let it boil for another 5 minutes. Moonga udok is ready. Enjoy warm!
